Our Smoked Haddock is cured at the oldest Smoke House on the Grimsby docks called MTL. The haddock is bought in the morning and filleted by craftsmen. They hang overnight in chimneys above oak wood chips. Fantastic for freezing as its cured it doesn’t lose flavour.
